Lenten Desserts?

If you are not opposed to using oil during the fast, try making some Irish Tea Cakes. Scroll down a little ways to find them. I made them for St. Patrick's Day (my Namesday) and they were amazing! I alternated Trader Joe's Blueberry Preserves and some Three-Fruit Irish Wiskey Marmalade. Very good with tea.

I made a batch this evening and some of them turned out kind of runny. They were delicious, but didn't look good enough to take to the county fair. I did some with IKEA lingon berries, and the others with homemade grape jelly. FYI, when I type in lingon berries, spell check wants to change it to Klingon. Perhaps we could start a new line of Star Trek cookies.

Hey, there are Star WARS cookies, why not Star Trek? I'm all for it.

I made mine with some kind of smart balance or something margarine. I did find that if I handled them too long before putting them in the oven that they started to melt a little, but I didn't have a problem once they were in the oven. Maybe it was too hot in your kitchen while you were preparing them? Or maybe your oven wasn't hot enough to set them? Have you checked your oven temperature? I never trust them. Or maybe it was just using real butter. :) I'll try it that way some day and we can compare notes.

No, unfortunately I am considered one of the in-laws, not some cool FlyJulie...bummer. I did make them with real butter. Perhaps my butter was too hard. Oh well.
